Cooper's Po-Boy Express is a cutting-edge mobile food service unit, that serves "Original New Orleans Po-Boys" (sandwiches) and cuisine. It was founded in 2011 by Priscilla Harris and Roy Cooper. As a sister and brother team that is originally from New Orleans, but now located in Houston, we decided to start a small restuarant serving New Oleans style sandwiches. The uniqueness is our Custom Built "Trolly Style" food trailer that represents the New Orleans Street cars and the culture of the city. Our MOBILITY is unlimited as well as our capacity to serve food.
