This is a bakery/coffee bar startup specializing in non-dairy baked goods. There will be traditional dairy-based baked goods, but with the growing number of allergies to dairy products, we feel this is a very lucrative niche market.
This is not a "new" venture in the sense that I've been baking the non-dairy way for over 12 years and have a small but faithful clientele already in place.
The business serviced 10 vegan/vegetarian restaurants between 2003 - 2005 in Brooklyn & Manhattan.
My partner and I are very clear about the various regulations that need to be met, the insurance that has to be obtained, as well as how to cost out a recipe to see if it is cost-effective enough to keep on the menu.
