I have found a location in central New Jersey for a barbecue restaurant. Food will be smoked in a Southern Pride smoker for up to 12 hours. I will have a limited menu consisting of ribs (smoked 3 to 4 hours), brisket (smoked 12 hours), pork (smoked 12 hours), chicken (smoked 3 hours) and smoked sausage from Texas. There will be a few side dishes also. Everything will be made on premises with quality ingredients. It will be self-service and seat 50 people. I expect much of the business to be take out and catering. The location is in a very busy area and there is no true barbecue restaurant within a 50 mile radius.
