Description: I have met with several bankers. One community bank is willing to finance this project for 20% cash-in. My partners and I have $20K of the required down payment leaving a difference of $110K to start this project. I've pasted the executive summary portion of our business plan below. Thank you, Jamie Robinson 1.0 EXECUTIVE SUMMARY Smokehouse Brewpub is a proposed 90 seat neighborhood restaurant and on premise brewery specializing in creative food and handcrafted beer. The food focus will be on using local, high quality ingredients showcased in and around our house-smoked meats. The beer focus will be on following current trends in popular beer styles and satisfying our core beer enthusiasts with creative seasonal offerings in a comfortable, social atmosphere. Craft beer sales have recorded double-digit growth each of the past five years, despite the economic downturn, with 10.3% growth in 2009 and 12% growth in 2010, propping up the beer industry as a whole. Simultaneously, interest and consumption of locally produced and handmade fresh food is on the rise. Management will capitalize on these trends. The brewpub will create high quality handmade local fare, and full-flavored, creative takes on popular craft beer styles. The quality and creativity behind the meats and beer along with a knowledgeable, well trained serving staff will keep Smokehouse Brewpub a fresh neighborhood staple. Located two blocks off of the 38th Street Station Hiawatha light rail line in the already beer-savvy Standish neighborhood of Minneapolis, the brewpub will have heavy foot traffic and easy accessibility to customers from outside the neighborhood. Brewpubs have an advantage over regular bars and restaurants because they produce their own beer that cannot be found elsewhere. And they can produce it at about one-third the cost of buying kegs from other breweries. In addition to this advantage, there is currently a groundswell of enthusiasm for locally brewed craft beer. By making smoked meats in-house we can cut food costs by a third compared to normal pub far without adding significantly to labor costs. According to figures from the Brewers Association, the average brewpub this size posts about $1.1 million in annual sales. With a strict adherence to labor, food and beverage cost control policies, we project $187,000 cash flow on $944,000 in sales in our first year. Our owner-management team is seeking $650,000 in start-up capital. The funds will be used to purchase and install brewery and restaurant equipment, fixtures, supplies, and all start-up expenses and inventory. 1.1 OBJECTIVES 1) To seize the opportunity to open the first brewpub in the Twin Cities Metro area in the last ten years. 2) To capitalize on the craft beer market that posts double-digit growth in a sluggish economy with the possibility of expanding when the economy returns to normal. 3) To capitalize on food connoisseurs by providing unique, local, high quality menu items that change frequently and pair well with popular craft beer styles. 1.2 MISSION STATEMENT Smokehouse Brewpub aims to provide creative, high quality food and handcrafted beers to the fast growing market segment of beer enthusiasts. We will create a comfortable atmosphere in a neighborhood setting. A knowledgeable and exceptional service staff will secure our success. 1.5 START-UP SUMMARY The primary start-up expense will be the brewery build-out and ingredients currently estimated at $375,000. Another $125,000 for kitchen build-out, equipment and supplies and another $75,000 for bar and dining area furniture, fixtures and inventory. An additional $75,000 for city fees and licenses and architect fees brings the total start-up cost to $650,000.
