Im looking to open a fine dinning gastro pub in the heart of downtown Little Rock in the Rivermarket district. The focus will be on the food, which the best I can describe as aecletic American. Gorumet sandwiches and salads, with a flare on comfort foods that we have grown up on, such as lobster pot pie, pot roast, chicken spaghetti, and mac n cheese, just to name a few. Menu will continuely change with the season. Also being in the location that I have found, i will be able to shop at the farmers market thats right next door, so I will be able to use the freshest ingredents. Being a pub I cant over look the beer aspect , besides bring in all the finest regional brews, we will also have some of the higher end brews from around the world. Being a chef I will also be able to create menu that can be paired with brews that complement the food. Once a month we will have private dinners that promote up and coming beers to the state, and the local flavor of culinary talent in the state. As for me I have been in the food service industry for 16 years and have been a chef for 8, food is my life. I have over 20 different restaurant theme's that I know are money makers, its just I need someone that believes in me and is willing to have the faith, and the ambition in making a profit in the 2nd year. The location is already standing, and all furnishing come with it. $75K buys the location which is around 5500 sq ft. Also being in prime location doesn't hurt.
