Description: Problem To Be Solved: Fresh baked bread and other baked goods have a very short shelf life of just a few days before molding and stailing take effect deteriorating it to the point it becomes inedible. In fact, according to (URL removed) approximately 1/3 of all fresh baked bread is wasted due to spoilage. My solution: The Bread Vault appliance extend the useable life of fresh bread and other fresh baked goods from just a few days to a month or more. This is achieved by employing a modified atmosphere food storage chamber in which air including oxygen and mold spores that cause the rapid spoilage of bread and other baked goods is purged out and replaced by a food grade inert gas or mix of gasses such as nitrogen and carbon dioxide dramatically reducing the foods exposure to the air. The Bread Vault appliance isn’t just an improvement on an existing appliance, it is a new category of appliance. Market Potential: The market is world-wide and vast including everywhere bread and other fresh baked foods are baked and eaten. I am confident that once the Bread Vault appliances are introduced, they will quickly become indispensable tools in many food service environments including grocery stores, sandwich shops, dormitories, hospitals, and restaurants.
