My intent for Bright City is to create the world's most refined and elegant Cafe, starting with the sourcing of high-grade, organic, fair-trade coffee from around the world, a diverse collection of roasts done in-house with a Diedrich custom roaster, and as a roastery, to offer finely-tuned roast profiles to local coffee shops and homes in the area, in addition to the master brewing techniques and experimental techniques being developed all over the world, from espresso to chemex to siphon, yama towers, and a turkish coffee bar, we will pride ourselves on the details involved to make spectacular coffee, while also incorporating an express coffee bar area for the "get-it-and-go" kind of clientele, eventually moving toward growing our own teas and coffee using a vacuum-depressurized greenhouse under total microclimate control. In short, I want to build the Eiffel Tower of coffee shops.
