For the past eight months I have been in talks with investors to for a partnership and open a restaurant in Melbourne, Florida. As it is with most deals of this nature, there have been some bumps in the road. We had one investor pass away, and now another is having second thoughts as he has been reflecting on how much longer he wants to work. The passing of a partner can really make you re-evaluate how you spend your time.
My role in the deal has always been defined as Owner/Operator. I am an accomplished chef, but have been working in food distribution for the past eleven years. It's given me more insight on where the industry is than I ever could have gotten if I'd stayed in the kitchen. I am a consultant to my clients and have seen enough of the good, the bad, and the ugly to know what works and what doesn't.
My concept is based on the principles of innovation, quality, value, and efficient execution. I believe in staying ahead of the curve and I embrace new techniques and technology in all areas of the business from culinary technique, to technology in daily operations, and savvy social network driven marketing. Gretzky always claimed his success was because he always looked toward where the puck is going, not where it's at right now.
I have the design for the system and the willingness to do whatever it takes to create success. I do not have the capital. I can adjust the size of the restaurant up and down depending on the amount of investment, but regardless of any conditions, I must be a partner.
